WHAT IS THIS WORLD

Hospitality is one of the largest employing industries in the country. Restaurants, hotels, cafes, clubs, pubs, catering operations, aged care facilities, events, resorts — the environments are different but the underlying requirement is the same: people who can perform, under pressure, to a standard, every service.

It is a demanding industry. The hours are unsociable. The pace is relentless. The margin for error in a commercial kitchen or a licensed venue is thin. The people who build careers in it are not the ones who thought it looked fun — they are the ones who learned the craft, developed the discipline, and found that they were genuinely good at operating in that environment.

The industry spans two distinct but connected worlds. Front of house — service, beverage, bar operations, venue management. And kitchen — cookery, kitchen operations, catering, patisserie, kitchen management. The qualification pathway covers both, from entry level through to management and leadership at Advanced Diploma level.

WHERE CAN IT TAKE YOU

Entry level in hospitality is a genuine entry point, not a holding pattern. Bar attendant, food and beverage assistant, kitchen hand, short order cook — these are real roles that lead somewhere. The industry promotes quickly when it finds people who are reliable, skilled, and professional.

From entry level the pathway moves into specialist roles — barista, sommelier, chef, function coordinator — and from there into supervisory and management positions. Kitchen manager. Venue manager. Food and beverage manager. Operations manager. At the senior end of this industry, the roles are substantial and the compensation reflects it.

Commercial cookery is its own career stream. The pathway from Certificate III in Commercial Cookery through to Certificate IV in Kitchen Management is a structured trade pathway — the hospitality equivalent of a trade apprenticeship — leading to roles as a qualified chef and, further along, as a kitchen manager or executive chef.

The RSA, RSG, food safety, and espresso qualifications are industry entry points in their own right. RSA is mandatory for anyone working in a licensed venue. RSG is required for anyone working in a gambling venue. Food handling and food safety supervision are required across almost every hospitality environment. Barista and espresso service skills are among the most portable in the country — the cafe and coffee sector is not contracting.

WHAT THIS TRAINING LOOKS LIKE

Hospitality training with Specialised is delivered in working hospitality environments — commercial kitchens, licensed venues, cafes, hotels, and catering operations. You train where the work happens, under the supervision of an approved workplace mentor who is already working professionally in the industry.

Before training begins, we identify and approve a suitable workplace mentor in your environment. We assess them, brief them, and support them throughout your training. Your competency is documented against the national standard — a structured record of what you can do, demonstrated in a real service or production environment, under real operating conditions.

The skill sets and individual units — RSA, RSG, food handling, food safety supervision, and espresso — can be delivered as standalone units, as skill sets, or as components of a broader qualification. Call us and we will tell you how they fit into your situation.
